Of course, I had to Halloweenize this holiday, so on July 4th proper I carved a melon-o-lantern out of a mini watermelon. Yep, I really do try to make every day Halloween! It was a lot of fun, easy to do (though I did bust out my pumpkin carving tools), and reminded me that Halloween is not that far away! Here is my patriotic and starry-eyed little creation:

It was only Mister Spooky and I for Independence Day, so after melon carving we cooked up some of Beyond Meat's Beast Burgers (wholeheartedly recommended - you can read my full review HERE!), baked up some waffle fries and onion rings, and assembled some MONSTER burgers! The burger I made was stacked with the Beast Burger, Field Roast's Chao Cheese in Creamy Original, onion rings, tomatoes, lettuce, waffle fries, and topped with Just Mayo in Chipotle! It was soooooo good!
I had made potato salad the day before (I used PETA's Creamy Dill Potato Salad recipe and it turned out AWESOME), so we had that and MORE waffle fries/onion rings as sides. If you can't tell, I love to stuff my face with vegan food! And you can also tell that vegan food is flippin' crazy awesome and easy to make as well!
I shall call thee the KABOOM burger!
You'd think we'd be stuffed by all that food (seriously, the photo above doesn't quite capture how HUGE the burgers were!), but you'd be wrong! We still had dessert to get through before the fireworks started, so we had Daiya's New York Cheezecake, which I covered in blueberries, strawberries (cuz 'Merica!) and edible flowers (cuz pretty!). I LOVE this vegan cheesecake, it is so moist and decadent, plus it cleans up real nice!

Overall, it was a delicious day, though one day I hope this day symbolizes freedom for ALL - humans and animals alike.
