Spooky Halloween Leftovers
Whew, it's hard to believe Halloween season is over and that November is already half over! This Halloween season was a little rough on me (not to mention being hit with some bad post-Halloween blues), so I'm taking a break to reset and focus on goals for next year. I need some time to focus on the smaller things, spend time with myself and family, and get inspired for next year.
In the meantime, I thought I'd share some of my Halloween leftovers with you all, which are basically just a random bunch of pictures from the Halloween season I haven't yet shared here. Looking back at what I did this season is a big help in getting me excited about next Halloween season, believe it or not! And hopefully they will help me (and maybe you) beat the Halloween blues.
Check out some Halloween 2017 leftovers below:

Make a Vegan Jack-o-Lantern Burger for Halloween
Enjoy a vegan Halloween burger this October (and beyond)!
If you're like me, you like to add Halloween magic to everything, and that includes food! I mean, I don't have the time to get too fancy, but a few fearsome flourishes can add Halloween spirit to any meal. As you can see from my pic above, sometimes the simplest trick makes for a festive treat! Turning a vegan cheeseburger into a Halloween cheeseburger is really easy, but I'll walk you through how to do it below.

What I Ate: July Junk Food Edition
Tex Mex Taco Fries - made with Trader Joe's shoestring fries, Trader Joe's Soy
Chorizo, a cilantro pesto sauce and creamy garlic Alfredo crema (recipes in
the June edition of VegNews), tomatoes, jalapenos, onions.
From the pics below, it looks like I have subsisted on a diet of only vegan donuts, pizza, and sweets this July! Well, maybe that isn't too far from the truth, haha, but perhaps in the future I'll take pics of healthier meals (and try to eat healthier more often...maybe?). All the glorious food in this post is, as always, vegan, and I love sharing these posts with readers so they can see that vegans don't only eat salads.
So here is some of the delicious vegan junk food that I enjoyed this July!

What I Ate: Pizza and Donuts Edition
Heartbreaker Pizza for Valentine's Day - hand-shaped vegan crust topped with
tomato sauce, vegan mozzarella, onions, vegan sausage, and kale.
Well, February appeared to be a pretty decadent month for me, at least based on what I ate. Looking at the photographic evidence, my diet seemed to consist of a lot of pizza and donuts. Oops or success, depending on how you look at it!
Though I wish I could subsist on pizza and donuts alone, I cannot, while I do looooove both! I promise I eat healthy on occasion, though I don't usually take pictures of my healthier meals. I'll make a better effort to document my healthier meals in the future! In the meantime, though, you can join me in drooling over the many pizzas and donuts I enjoyed in the last month, as well as a few other decadent meals and a few healthy ones as well!

What I Ate: Holiday Edition
Vegan Shepard's Pie that Mister Spooky made. It was the perfect
comfort food, filled with veggies, Beyond Meat crumbles,
mushrooms, and topped with toasted mashed potatoes!
These are mostly random food photos, meaning I haven't featured any of these in previous posts, including any recent food reviews. If you follow me on Instagram, though, you are probably familiar with some of the photos below:

What I Ate: June Junk Food Edition
I meant to post this at the beginning of July, but this month has just flown by! Is it just me or is this summer going by super-fast?! Not that I'm complaining, mind you; summer can suck it and autumn can't come soon enough! Anyways, I can't let these vegan junk food pics go to waste (though you will recognize some if you follow me on Instagram), so I'm sharing the yummy noms I ate in June below:
This is Amy's Vegan Margherita Pizza topped with avocado slices and sriracha.
I already love the pizza on its own, but the addition of the avocado and sriracha
just sky-rocketed its flavor!

What I Ate: Independence Day Edition
I had a lovely and languid three-day weekend for the July 4th holiday, where all I did was watch movies, take naps and eat some decadent food!
Of course, I had to Halloweenize this holiday, so on July 4th proper I carved a melon-o-lantern out of a mini watermelon. Yep, I really do try to make every day Halloween! It was a lot of fun, easy to do (though I did bust out my pumpkin carving tools), and reminded me that Halloween is not that far away! Here is my patriotic and starry-eyed little creation:

What I Ate - April/May 2015
I've been a little stressed at work lately, so I haven't had a chance to post much. I wanted to remedy that, but since my life has pretty much been work, eat, sleep, repeat, I haven't had much to write about. However, inspired by Vegan Crunk's "Stuff I Ate" posts, I figured I could at least share some of the better things I've eaten in the past couple weeks. I love drooling over everyone's vegan food posts, so I thought this would be a fun, quick, and visual way to showcase some finger-lickin' vegan food I've eaten recently! Note: Most of these have been posted previously on my Instagram, in case you already follow me there and are thinking these look a tad familiar!
My version of Frito pie! I made this with Trader Joe's Corn Dippers (though Fritos are "accidentally" vegan), black and refried beans, Follow Your Heart's Cheddar Vegan Gourmet Shreds (my new fave vegan cheese shreds!), crispy cabbage, red salsa and hot sauce.
