Easy Orange Flavored Tofu

I have a confession to make: I'm a lazy cook. I hate spending hours slaving away in the kitchen on a meal that will be gone within minutes, especially when I've been working all day and just want to relax during the evening.

So, my meals tend to skew towards the easy-peasy approach. And when I stumble upon a recipe that uses 5 or less ingredients, I'm totally stoked! This particular recipe (I found it somewhere online, though I can't remember the source - apologies!) calls for only 3 ingredients, which had my lazy bum leaping for joy (at least on the inside...it's entirely too much effort to physically leap for joy)!

And check out the results, with a nice base of brown jasmine rice and edamame:

Easy Orange Flavored Tofu



Not only does it look pretty, but it's pretty darn tasty and has a delicate orange flavor that's never overpowering.

Orange Flavored Tofu

1/2 cup orange juice
1/4 cup maple syrup
1 package firm tofu

Directions:
Whisk together the orange juice and maple syrup in a bowl until the juice turns a brownish color. Cut the tofu into small, bite-sized cubes and stick them in the bowl with the juice, making sure all cubes are covered. You can also transfer the tofu/juice into another container that is better suited for marinating. Marinate the tofu for at least two hours, but preferably longer as the longer the tofu marinates the more flavor it picks up. After tofu has been marinated, pre-heat the oven to 400 degrees. Lightly spray a cookie sheet with cooking spray so the tofu doesn't stick and arrange the tofu on the cookie sheet. Stick the tofu into the oven and bake until tofu is a light brown, then flip the tofu cubes over so it cooks evenly on all sides. Total cooking time is approximately 10 - 20 minutes.

Serve with rice, noodles and your favorite veggies.
