Banana and Brown Sugar Pancakes

I've been craving pancakes recently, so when I got out of bed this beautiful Saturday morning I was determined to make the perfect vegan pancakes.

And I've succeeded!

I took a recipe I had and slightly tweaked it. Below you'll find the recipe so you can make these tasty pancakes that are perfect for a lazy weekend.

Banana and Brown Sugar Pancakes
(serves 2)

1 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons brown sugar
1 teaspoon vanilla
1 egg replacer (I use Red Mill's Egg Replacer; remember to follow the directions on the package!)
1 cup non-dairy milk (I use Rice Milk)
2 tablespoons vegetable oil
1 banana, mashed
Optional - 1 banana for garnish

Directions:
Pre-heat pan on medium heat.

Mix all dry ingredients in a large bowl.

In a smaller, separate bowl mix all the wet ingredients thoroughly, making sure there are no lumps.

Pour wet ingredients into dry - mix well until it reaches a smooth consistency.

Drop batter onto pre-heated pan. Flip over when tiny bubbles begin forming on top of the pancake (usually about 2 minutes). Cook on the other side for an additional 2 minutes.

Serve with banana garnish, Earth Balance vegan buttery spread and maple syrup!
