Candy Corn Pizza

Ahhhhh how I miss candy corn! The candy corn you find in stores isn't vegan, and I woefully miss it around this time of year (hey vegan companies, how about someone makes a vegan version pretty please??).

I gotta get my candy corn fix somewhere, so that's where this pizza comes in. No, it doesn't taste like candy corn, but its triangular slices sure do look like the sweet stuff! I was inspired to make a vegan version after seeing a recipe in the Ghoulish Goodies cookbook

For my version, all I needed was pizza dough (I used Trader Joe's fresh dough, which happens to be vegan), pizza sauce (again, from Trader Joe's), and three types of vegan cheese - I used Daiya cheddar, Follow Your Heart cheddar, and Trader Joe's Vegan Mozzarella. The two cheddar cheeses were slightly different in color, with the Daiya being a darker orange than the FYH, so it worked out really well to mimic the layers of candy corn! A word of warning about the Trader Joe's vegan cheese - it melts far faster than the other two, so when I do this again I would use a different white cheese, probably Daiya or FYH's vegan mozzarella.

I rolled out my dough, topped it with pizza sauce, then added my cheese, starting in the middle with a circle of the white vegan mozzarella and working my way out to the edges in rings of cheese, next using the FYH cheddar then the Daiya, as you can see in the photo above. Note, the cheeses aren't in layers, but rather rings around the original circle of white vegan mozzarella. I recommend this instead of layering so you get a more defined candy corn look.

I popped the pizza in the oven and cooked it according to the instructions that came with the dough. After it was done cooking, I took it out of the oven, let it cool, and sliced it into delightful candy-corn looking pizza pieces! I mean, look how cool they are!

FYI - I'll take vegan pizza over candy corn any day!
