Easy Chick Pea Curry

I couldn't wait to dig in before taking the pic!

This is a super quick and easy recipe that can be thrown together in about 30 minutes (including all the chopping!). I love Indian dishes, and this is one of the quickest and tastiest I know how to make.

1 onion, diced
a few tablespoons Earth Balance or olive oil for sauteing
1 8 oz. can of tomato sauce
8 cloves of garlic, minced
2 tsp. tumeric
1 tsp. cumin
1/2 tsp. all spice
1 tsp. cayenne pepper (more if you want it spicier)
2 cans of garbanzo beans
2 green bell peppers, chopped
Salt to taste

Saute onions in Earth Balance or olive oil until translucent, then add tomato sauce, garlic and spices. Saute for a few minutes and then add the garbanzo beans and peppers. Saute for about 5 more minutes, add salt and serve! I like it over quinoa (as seen in the photo above) or rice, and if you have some naan (Indian flat bread) to serve with it it's extra yummy!
