October's cooler days and nights call for some tasty warm drinks to keep the chill off, especially when I'm lounging on the couch, watching a marathon of horror movies. Luckily, I've found some yummy vegan recipes online for some deliciously comforting autumn beverages!
Pumpkin Pie Hot Chocolate (source)
• 1 1/2 tablespoons cocoa powder
• 2 1/2 tablespoons sugar
• 1/4 teaspoon pumpkin spice
• 1/4 teaspoon vanilla extract
• 1/8 teaspoon almond extract
• 4 1/2 cups soy milk (or non-dairy milk of your choice)
• 2 teaspoons instant coffee powder
Heat up soy milk in 2 quart sauce pan on medium-low.
When milk is warm, add the vanilla and almond extracts. Stir.
Add all the dry ingredients, but start with the cocoa powder and WHISK constantly to get all the clumps out.
When desired temperature is reached, pour into mug and drink! Top with vegan whipped cream if you wish!
Pumpkin Spice Latte (source)
Makes 3 servings
• 2 Cups Almond Milk
• 2 Tbsp Canned Pumpkin or Pumpkin Puree
• 2 ½ Tbsp Agave Nectar
• 1 ½ Tbsp Vanilla Extract
• ½ tsp Pumpkin Pie Spice
• 3 Cups Fresh Coffee
• Vegan Whip Cream, optional
• Cinnamon Sprinkled on Top, optional
Brew 3 cups of coffee.
In a medium pot, whisk together almond milk, pumpkin puree and agave nectar on medium high heat until steaming. Remove from heat.
Stir in vanilla and pumpkin pie spice. Using an immersion or regular blender, process for 15-20 seconds. If using a regular blender, hold a towel on top of the blender to prevent the steam from popping the lid off. Begin processing by pulsing first.
Divide pumpkin froth among 3 mugs, adding coffee on top. If you would like an extra pumpkin pie-like feel, add vegan whip cream with a dash of cinnamon on top!
