31 Days of Halloween: Pumpkin Pie Overnight Oats


Did you know pumpkins are packed with vitamins, antioxidants, anti-aging properties, fiber, minerals and more?! This squash's health benefits are plentiful and varied, and this is the perfect season to make all kinds of dishes with them! I've already shared a few recipes that utilize pumpkins as the star ingredient, but here is another one of my favorites!

Pumpkin Pie Overnight Oats are super-easy to make, plus you can prepare them the night before so you can dig in first thing in the morning. Not only do they feature pumpkin, but the rest of the ingredients are really healthy, too, and will help you get a jump start on your busy October morning.

Besides breakfast, these can be used as a pick-me-up throughout the day as well and are perfect for kids as a pre-trick or treat snack!

  1. Sounds good.

    I'd do a slight alteration, I always soak my grains overnight and then wash them thoroughly to remove the phytic acid, so I'd do that before combining with the other ingredients.

    You can even mix it up and then story it in a container in the fridge for easy meals through the week!
